One-Pan Autumn Chicken Sausage & Veggie Bake

*Feel free to add spices/herbs liberally, without measure. The only one to be careful with how much you use is salt due to the sodium content, but with the others, figure out what combination and amount pleases you and your family.  2 cups butternut squash, peeled and sliced into ~1/2 inch cubes
 2 cups chopped broccoli
 1 cup chopped cauliflower
 1.50 cups halved Brussels sprouts
 0.50 cup red onion, sliced into large slices
 4 tbsp olive oil
 2 tbsp garlic powder
 1 tsp paprika
 ½ tsp sea salt
 1 tsp cracked black pepper
 2 tbsp onion powder
 5 Nature's Promise Sweet Apple Chicken Sausages
 ½ cup chopped mushrooms

1. Preheat oven to 425 degrees F. Add all veggies in a large bowl with olive oil and all spices. Toss well until coated evenly.
2. Lay veggies in one layer across a large baking sheet, then spread sliced chicken sausages over the top of the veggies. Put in oven and cook for ~30-35 minutes total, or until veggies soften and sausages appear slightly browned, stirring halfway through.
3. When veggies are softened and sausages are slightly browned, remove from oven. Serve immediately, or portion into containers to save for meals for later in the week. Serve over a bed of fresh baby spinach, if desired.
