Lemon Balsamic Grilled Chicken w/ Strawberry Basil Salsa

 2 boneless, skinless chicken breasts, about 6oz each
 4 tbsp balsamic vinegar, separated into 2 tbsp and 2 tbsp
 3 tbsp olive oil, separated into 2 tbsp and 1 tbsp
 pinch of sea salt
 cracked black pepper, to taste
 juice of 1 lemon
 ½ tsp crushed red pepper, separated into 1/4 tsp and 1/4 tsp
 1 tbsp shallot, finely chopped
 6 medium strawberries, diced
 2 tbsp fresh chopped basil

Combine 2 tbsp balsamic vinegar, 2 tbsp olive oil, a pinch of sea salt, black pepper, the juice of 1 lemon, and 1/4 tsp crushed red pepper in a bag or large shallow dish. Add chicken breasts and let marinate in refrigerator for at least an hour (it will get more flavorful with a few hours).

When ready to cook, grill chicken until fully cooked throughout. While chicken is cooking, prep the strawberry salsa in step 3.

Combine diced strawberries, chopped shallot, 1 tbsp olive oil, 2 tbsp balsamic vinegar, basil leaves, 1/4 tsp crushed red pepper, and a pinch of salt in a small bowl. Let sit until chicken is done cooking, then serve on top of chicken.
